  • 1.5 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 1 egg egg
  • 0.5 cup vegetable oil
  • 0.25 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini
  • 0.5 cup miniature semisweet chocolate chips optional
  • 0.5 cup chopped walnuts optional

Method
 

Preparation Steps
  1. Preheat oven to 350°F. Line a muffin tin with liners. Set aside.
  2. In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
  3. In a medium bowl, whisk together the egg, vegetable oil, buttermilk, and vanilla extract.
  4. Add the wet ingredients into the dry ingredients, stirring until just combined. Fold in the shredded zucchini, chocolate chips, and walnuts if using.
  5. Fill muffin liners 2/3 full with batter. Bake for 20-23 minutes, or until a toothpick inserted into the center comes out clean.
  6. Serve warm or at room temperature.
