  • 0.67 cup whole milk Greek yogurt
  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice plus 1 tsp lemon zest
  • 1 Tbsp minced garlic
  • 1 Tbsp peeled and minced fresh ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 0.25 tsp cayenne pepper
  • 0.25 tsp cinnamon
  • 1 tsp salt and freshly ground black pepper to taste
  • 0.25 cup chopped cilantro plus more for serving
  • 2.25 lbs boneless skinless chicken thighs about 7 thighs

Method
 

Preparation Steps
  1. In a mixing bowl, whisk together yogurt, olive oil, lemon juice, lemon zest, garlic, ginger, cumin, coriander, paprika, cayenne pepper, cinnamon, salt, and cilantro.
  2. Place chicken in a large resealable bag. Pour the marinade over the chicken, seal the bag and rub to coat evenly.
  3. Refrigerate for at least 2 hours, preferably up to 8 hours for maximum flavor.
  4. Preheat the grill to 425°F. Clean and lightly oil the grates.
  5. Grill the chicken until cooked through, about 5 to 7 minutes per side, until internal temperature reaches 165°F.

Notes

Serve hot with side dishes of your choice. Garnish with additional cilantro if desired.
