  • 0.5 pound chicken breast boneless, skinless, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers (any color)
  • 0.5 cup sliced carrots
  • 0.5 cup sliced mushrooms
  • 0.25 cup low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic minced
  • sesame seeds for garnish (optional)

Preparation Steps
  1. In a small bowl, whisk together the soy sauce, rice vinegar, grated ginger, and minced garlic. Set aside.
  2. Heat the olive oil in a large skillet or wok over medium-high heat.
  3. Add the chicken breast pieces and stir-fry until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Add the broccoli florets, sliced bell peppers, sliced carrots, and sliced mushrooms to the skillet. Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.
  5. Return the cooked chicken to the skillet. Pour the prepared sauce over the chicken and vegetables.
  6. Stir everything together and cook for another 2-3 minutes, or until the sauce has thickened and everything is heated through.
  7. Serve immediately, garnished with sesame seeds if desired.

Notes

This stir fry can be customized with your favorite vegetables. For a spicier kick, add a pinch of red pepper flakes to the sauce.
