  • 1.25 pounds boneless skinless chicken breasts diced into 1-inch cubes
  • 1 tablespoon olive oil
  • 0.25 cup low-sodium soy sauce
  • 0.25 cup water
  • 2 tablespoons honey
  • 1.5 tablespoons packed light brown sugar
  • 1 tablespoon rice vinegar
  • 0.25 teaspoon toasted sesame oil
  • 2 teaspoons peeled and minced fresh ginger
  • 2 teaspoons peeled and minced fresh garlic
  • 2 teaspoons cornstarch
  • optional Sesame seeds and chopped green onions for serving

Method
 

Preparation Steps
  1. Heat olive oil in a 12-inch non-stick skillet over medium-high heat.
  2. Add chicken and cook for 3-4 minutes on each side until browned and cooked through.
  3. While chicken is cooking, whisk together soy sauce, water, honey, brown sugar, rice vinegar, sesame oil, ginger, garlic, and cornstarch in a small bowl.
  4. Pour the sauce mixture into the skillet with chicken, and cook, tossing, until the sauce has thickened, about 30-60 seconds.
  5. Serve immediately garnished with green onions and sesame seeds if desired.
