  • 1.5 lbs lean ground beef
  • 0.5 cup finely diced sweet yellow onion
  • 2 tbsp fresh minced garlic
  • 2 ounces mild taco seasoning
  • 1 cup water
  • 4 pieces flour tortillas (10 inch)
  • 2 cups chunky mild salsa divided
  • 15 oz can black beans drained and rinsed, divided
  • 3 cups fiesta blend shredded cheese divided
  • 2 tbsp chopped cilantro optional garnish
  • sour cream optional topping
  • fresh pico de gallo optional topping

Method
 

Preparation Steps
  1. Preheat the oven to 375°F.
  2. Lay 2 tortillas into the bottom of a 9x13 baking dish. Trim edges as needed.
  3. Spray a 9x13 baking dish with nonstick spray. Set aside.
  4. Cook ground beef, onion, and garlic in a skillet over medium-high heat until beef is browned and cooked through, about 8 minutes. Drain excess fat.
  5. Whisk together taco seasoning and water in a small bowl. Add to beef mixture and simmer for 2-3 minutes until thickened.
  6. Spread ½ of beef mixture over the tortillas.
  7. Spread ½ of salsa over beef.
  8. Sprinkle ½ of black beans and ½ of shredded cheese over the salsa.
  9. Repeat layers with remaining tortillas, beef, salsa, beans, and cheese.
  10. Bake for 20-25 minutes. Garnish with cilantro, and serve with sour cream and pico de gallo if desired.
