  • 1.5 pounds lean ground beef
  • 0.5 cup finely diced sweet yellow onion
  • 2 tablespoons fresh minced garlic
  • 2 ounces mild taco seasoning
  • 1 cup water
  • 4 pieces flour tortillas 10 inch or 9 inch
  • 2 cups chunky mild salsa
  • 15 ounces can black beans drained and rinsed
  • 3 cups fiesta blend shredded cheese
  • 2 tablespoons chopped cilantro optional garnish
  • none Sour cream optional topping
  • none Fresh pico de gallo optional topping

Method
 

Preparation Steps
  1. Preheat the oven to 375°F.
  2. Lay 2 of the flour tortillas into the bottom of a 9x13 baking dish. Trim the edges as needed.
  3. Spray a 9x13 baking dish with nonstick spray. Set aside.
  4. Cook ground beef, onion, and garlic in a skillet over medium-high heat until cooked through. Stir often.
  5. Whisk together taco seasoning and water; add to cooked beef. cook until thickened, about 2-3 minutes.
  6. Arrange 2 tortillas in the dish. Spread half of the beef mixture on top.
  7. Spread half of the salsa, black beans, and shredded cheese over the beef layer.
  8. Repeat layers with remaining tortillas, beef, salsa, beans, and cheese.
  9. Bake for 20-25 minutes. Garnish with cilantro, and add optional toppings like sour cream and pico de gallo before serving.
