  • 4 large red potatoes
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 0.25 cup parmesan cheese

Method
 

Preparation Steps
  1. Preheat oven to 375°F. Wash potatoes thoroughly.
  2. Bake potatoes in the oven for about 45 minutes until tender.
  3. While potatoes are baking, mince garlic and heat oil in a pan over low heat.
  4. Remove potatoes from oven, let cool slightly, then cut in half and scoop out the insides.
  5. In a bowl, mash scooped potato with minced garlic, Parmesan, salt, and pepper.
  6. Spoon the mixture back into potato shells and sprinkle with additional cheese if desired.
  7. Bake stuffed potatoes for an additional 15 minutes until cheese is melted and golden.

Notes

Best served hot with a side salad.
