Preparation Steps
- Preheat the oven to 375°F.
- Use a sharp knife to cut a pocket into each chicken breast without slicing all the way through.
- In a bowl, combine shredded mozzarella, chopped spinach, and cooked quinoa.
- Stuff each chicken breast with the mixture and seal with toothpicks if necessary.
- Mix garlic powder, paprika, salt, and pepper and rub over the chicken breasts.
- Place the stuffed chicken breasts in a baking dish and bake for 35-40 minutes until cooked through and golden on top.
- Remove from oven and let rest for 5 minutes before serving.
