  • 0.5 cup granulated sugar
  • 1 teaspoon lemon juice
  • 1 pound fresh strawberries washed, hulled, diced
  • 12 pieces egg roll wrappers
  • none water for wetting the edges of the egg roll wrappers
  • none confectioners' sugar for topping

Method
 

Preparation Steps
  1. In a medium bowl, beat cream cheese, sugar, and lemon juice until smooth. Fold in the diced strawberries.
  2. Set out the egg roll wrappers on a clean surface. Place 2-3 tablespoons of cream cheese mixture in the center of each wrapper.
  3. Wet the edges of the wrapper with water. Fold the bottom corner over the filling, then roll to enclose. Fold in the sides to form an envelope and seal with a dab of water.
  4. Spray or brush the outside of each egg roll with cooking oil. Place in an air fryer.
  5. Air fry at 400°F for 4-5 minutes, flipping halfway, until golden brown.
  6. Transfer to a plate to cool slightly. Dust with confectioners' sugar before serving.
