Ingredients
  

Sauce
  • 3 cloves garlic
  • 2 tablespoons rice vinegar
  • 0.25 cup agave or brown sugar
  • 0.25 cup fish sauce
  • 0.33 cup lime juice
  • 0.33 cup vegetable oil
Bowls
  • 7.5 ounces rice noodles cooked according to package directions or soaked until tender
  • 0.25 cup fresh basil, chopped
  • 0.25 cup fresh mint, chopped
  • 0.25 cup fresh cilantro, chopped
  • 1 serrano pepper, thinly sliced optional, for spice
  • 0.5 cup peanuts, chopped
  • 2 avocados, sliced
  • 2 carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, thinly sliced
  • 1 pound shrimp, tofu, or chicken cooked, optional

Method
 

Preparation Steps
  1. Combine all sauce ingredients in a blender or food processor and pulse until smooth.
  2. Cook rice noodles according to package directions, or soak in cold water for about 30 minutes until softened. Drain well.
  3. Finely chop the fresh herbs, thinly slice the serrano pepper (if using), and julienne or thinly slice the carrots, red bell pepper, and cucumber.
  4. If using, cook your chosen protein (shrimp, tofu, or chicken) according to your preference.
  5. In a large bowl, toss the cooked rice noodles with the prepared sweet garlic lime sauce. Add the chopped herbs, sliced serrano pepper, julienned carrots, sliced red bell pepper, sliced cucumber, chopped peanuts, and cooked protein (if using). Toss gently to combine.
  6. Divide the mixture into bowls and top with sliced avocado.
