  • 2 small ripe spaghetti squash
  • 4 oz chicken breasts
  • 0.25 tsp garlic powder
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese

Preparation Steps
  1. Preheat oven to 375°F. Cut the squash in half lengthwise and scoop out seeds. Place on a baking sheet, cut side up, and bake for 45 minutes or until tender.
  2. Meanwhile, season chicken breasts with salt, pepper, and garlic powder. Grill over medium heat until cooked through, about 5-6 minutes per side.
  3. Fluff spaghetti-like strands from the squash with a fork and scoop into a bowl. Mix with 1 cup marinara sauce.
  4. Slice grilled chicken and layer on top of the spaghetti squash. Sprinkle with shredded mozzarella cheese.
  5. Return to the oven and bake for an additional 15 minutes until cheese is melted and bubbly.
  6. Garnish with fresh basil if desired and serve hot.

Feel free to add your favorite herbs or sprinkle some parmesan cheese on top!
