Slow Cooker Ropa Vieja

A classic Cuban shredded beef stew, made incredibly easy in the slow cooker. Tender, flavorful, and perfect for a comforting meal.

Ingredients
  

Main Ingredients
  • 3 pounds flank steak
  • 1 large onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 4 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz), undrained
  • 0.5 cup beef broth
  • 0.25 cup tomato paste
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup olives, pitted and sliced optional
  • 0.25 cup fresh cilantro, chopped for garnish

Method
 

Preparation Steps
  1. Place the flank steak in the slow cooker.
  2. Top with the sliced onion, green bell pepper, and red bell pepper.
  3. Add the minced garlic, diced tomatoes (undrained), beef broth, tomato paste, cumin, oregano, salt, and pepper.
  4. Cover and cook on low for 8-10 hours, or on high for 3-4 hours, until the steak is tender and shreds easily with a fork.
  5. Remove the steak from the slow cooker and shred it using two forks. Return the shredded beef to the sauce in the slow cooker.
  6. Stir in the sliced olives, if using.
  7. Serve hot, garnished with fresh cilantro.

Notes

This Ropa Vieja is delicious served with white rice, black beans, and fried plantains. It also makes a fantastic filling for tacos or empanadas.
