  • 1 lb dried red beans
  • 7 cups water
  • 1 green bell pepper chopped
  • 1 medium onion chopped
  • 3 celery stalks chopped
  • 3 garlic cloves chopped or minced
  • 2 cans chicken broth
  • 1.5 pounds smoked sausage sliced into bite-sized pieces
  • 2 tablespoons Creole Seasoning
  • white rice for serving, cooked separately

Method
 

Preparation Steps
  1. Rinse the dried red beans thoroughly and place them into your slow cooker.
  2. Add water, chicken broth, chopped garlic, green bell pepper, onion, and celery to the beans in the slow cooker.
  3. Add the sliced smoked sausage and Creole seasoning to the crock pot.
  4. Cover and cook on high for about 7 hours, or on low for 8-10 hours, until beans are tender.
  5. When ready to serve, cook white rice according to package directions.
  6. Spoon desired amount of cooked rice into a bowl and top with the red beans and sausage mixture. Serve hot.

Notes

For an extra kick, add a dash of hot sauce to your bowl. A side of cornbread pairs perfectly with this hearty meal.
