  • 1 pound large shrimp
  • 1.5 quarts vegetable or chicken broth
  • 1 Tbsp fish sauce
  • 1 Tbsp soy sauce
  • 1 cinnamon stick cinnamon stick
  • 1 star anise pod star anise
  • 0.25 inch ginger (sliced)
  • 8 oz white mushrooms (halved)
  • 1 bunch cilantro
  • to taste Salt
  • 6 oz thin rice noodles
  • 3 cups cauliflower or broccoli
  • for garnish Thinly sliced jalapeno, lime wedges

Method
 

Preparation Steps
  1. Thaw the shrimp if frozen, drain thoroughly, and set aside.
  2. Add broth, fish sauce, soy sauce, cinnamon, star anise, sliced ginger, and shrimp shells (if any) to a pot and simmer for 20-25 minutes.
  3. Meanwhile, cook the rice noodles in boiling water according to package instructions, then drain.
  4. Add mushrooms and broccoli to the broth and cook 4-5 minutes until tender.
  5. Add the shrimp to the broth and cook 1-2 minutes until pink and firm.
  6. Assemble bowls: distribute noodles, then ladle hot broth with shrimp and vegetables on top. Garnish with cilantro, jalapeno, and lime wedges.
