  • 1.5 cups cooked sushi rice
  • 1 lb salmon, cubed
  • 2 tbs olive oil
  • 1 tbs sesame oil
  • 1 tbs low sodium soy sauce
  • 1 tbs rice vinegar
  • 1 tbs honey
  • 1 tsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 tbs sesame seeds
  • 2 scallions diced

Method
 

Preparation Steps
  1. Preheat oven to 400°F. Cut nori sheets into 4 squares each.
  2. In a large bowl, whisk together olive oil, sesame oil, soy sauce, vinegar, honey, ginger, garlic, sesame seeds, and scallions. Add cubed salmon and marinate for 1 hour.
  3. Place about 1 heaping tablespoon of rice onto each nori square, then fold into muffin molds, pressing gently. Fill each muffin with 4-5 salmon cubes.
  4. Bake for 15 minutes. Broil for 1-2 minutes if additional browning is desired.

Notes

Serve warm with additional scallions or soy sauce as desired.
