Preparation Steps
- Preheat oven to 350°F. Line an 8×8-inch pan with aluminum foil and spray with cooking spray.
- In a large bowl, whisk together eggs, sugar, pumpkin puree, oil, pumpkin pie spice, and vanilla extract.
- Add flour, baking powder, baking soda, and salt. Stir until just combined.
- Pour batter into prepared pan and smooth the top. Bake for about 35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely on a wire rack before frosting.
- For the frosting, beat together cream cheese, butter, confectioners’ sugar, vanilla, and salt until smooth and fluffy.
- Spread frosting over cooled cake evenly. Slice and serve.
