Preparation Steps
  1. Combine the chocolate cracker crumbs with melted butter to make the crust; press into a 9-inch springform pan.
  2. In a stand mixer, beat the cream cheese, sugar, and vanilla until smooth.
  3. Add pumpkin, eggs, and pumpkin pie spice to the mixture; beat until creamy.
  4. Pour the filling into the prepared crust.
  5. Bake at 350°F for 60 to 70 minutes until set.
  6. Allow the cheesecake to cool and then chill in the refrigerator.
