Preparation Steps
- Preheat oven to 350°F. Spray a 9x5-inch loaf pan with nonstick cooking spray (or grease and flour it).
- Whisk together flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt in a small bowl. Set aside.
- Stir brown sugar, vegetable oil, pumpkin puree, and mashed bananas in a large bowl.
- Stir in eggs and vanilla, then mix in dry ingredients until just combined.
- Pour batter into prepared pan. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before removing to a wire rack to cool completely.
