  • 1 tablespoon butter for baking dish, room temperature
  • 2.5 pounds red potatoes washed, peeled, and sliced 1/8-inch thick
  • 0.5 cup feta cheese crumbled
  • 2 cups heavy cream
  • 3 large eggs
  • salt to taste
  • black pepper to taste

Method
 

Preparation Steps
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Rub a 13x9 inch baking dish with butter.
  3. Layer half of the potato slices in the prepared dish, overlapping them slightly.
  4. Spread the crumbled feta cheese evenly over the potato slices.
  5. Layer the remaining potato slices on top of the feta cheese.
  6. In a separate mixing bowl, whisk together the heavy cream, eggs, salt, and pepper until well combined.
  7. Pour the cream mixture evenly over the potatoes to cover them. Cover the baking dish tightly with foil.
  8. Bake for 40 minutes. Then, remove the foil and continue to bake for another 35-40 minutes, or until the top of the bake is golden brown and the potatoes are tender when pierced with a fork.
  9. Let the potato feta bake rest for 15 minutes before cutting and serving.

This dish can be served as a hearty side to grilled meats or poultry, or enjoyed on its own with a fresh green salad.
