  • 14 oz sliced pineapple drained
  • 1 cup sugar
  • 0.333 cup shortening
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.333 cup milk
  • 1.333 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • 7 pieces maraschino cherries

Preparation Steps
  1. Preheat oven to 350°F.
  2. In a 9-inch round cake pan, melt butter. Sprinkle brown sugar over butter. Arrange pineapple slices on top. Place cherries in the center of each pineapple.
  3. In a large bowl, beat shortening and sugar until combined. Add egg, vanilla, and milk; mix well.
  4. In a separate bowl, whisk flour, baking powder, and salt. Gradually add to wet mixture, beating well.
  5. Pour batter over pineapple slices in the pan.
  6. Bake for 55 minutes or until a toothpick inserted in the center comes out clean.
  7. Immediately invert cake onto a plate, let sit for a few minutes, then remove pan. Cool for 15 minutes before serving.
