  • 3.5 cups low sodium chicken broth
  • 2 cans 15 oz cans black beans
  • 2 cans 10 oz cans Rotel tomatoes with green chilies
  • 1 red red bell pepper (minced)
  • 4 oz can diced green chiles
  • 1 tbsp ground cumin
  • 1 tsp ancho chile powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.25 tsp oregano
  • 16 oz boneless, skinless chicken breasts
  • 0.5 cup chopped cilantro (divided)
  • 2 medium scallions (diced)
  • for serving lime wedges
  • 1 medium Haas avocado (sliced)
  • optional sour cream

Method
 

Preparation Steps
  1. Place all beans, chicken broth, tomatoes, bell pepper, green chiles, spices, and chicken breasts in the slow cooker. Cover and cook on LOW for 6-8 hours.
  2. Once cooked, remove chicken and shred with two forks. Return shredded chicken to the slow cooker.
  3. Add half of the cilantro and diced scallions, and season with salt and cumin to taste. Stir to combine.
  4. Serve hot, garnished with remaining cilantro, scallions, sliced avocado, lime wedges, and a dollop of sour cream if desired.

Notes

This dish pairs well with a side of rice or tortilla chips.
