Preparation Steps
- Grease an 8x8 inch baking dish.
- In a medium bowl, combine peanut butter, sugar, and egg until well mixed.
- Press the peanut butter mixture evenly into the bottom of the prepared baking dish.
- In a separate bowl, beat the softened cream cheese until smooth. Fold in the thawed whipped topping.
- Fold in about 1.5 cups of the chopped Reese's Peanut Butter Cups, reserving the rest for topping.
- Spread the peanut butter filling evenly over the crust.
- Sprinkle the remaining chopped Reese's Peanut Butter Cups over the filling.
- For an optional chocolate drizzle, melt the chocolate chips with vegetable oil in the microwave or on the stovetop. Drizzle over the bars.
- Refrigerate for at least 2 hours, or until firm. Cut into bars and serve.

These bars are best served chilled. You can store them in an airtight container in the refrigerator for up to 3 days.
