  • 3 cups cheese tortellini
  • 1 cup cooked ham
  • 1 red pepper julienned
  • 1 carrot julienned carrots
  • 0.5 cup frozen peas cooked
  • 2 green green onions sliced
  • 1 cup extra virgin olive oil
  • 0.5 cup white wine vinegar
  • 2 tbsp wholegrain mustard
  • 2 tbsp fresh parsley chopped or dried
  • 3 cloves garlic minced

Method
 

Preparation Steps
  1. Cook cheese tortellini according to package directions. Drain, rinse in cold water. Set aside.
  2. Add cheese tortellini, ham, red pepper, carrots, peas, and green onions to a large bowl and toss to combine.
  3. In a small bowl, whisk together olive oil, white wine vinegar, mustard, parsley, and garlic. Pour over salad and toss to combine.
  4. Chill for 2 hours before serving.
