This easy no-bake Monster Eyeballs recipe makes the most adorable Halloween Oreo truffles out of Oreo cookies, cream cheese, and multi-colored candy melts.

  • 19.1 ounces family-size package of golden Oreos
  • 8 ounces cream cheese (room temperature)
  • 12 ounces colored candy melts
  • 0.5 cup color-matching sprinkles
  • 24 large candy eyes

Method
 

Preparation Steps
  1. Place the Oreos in a food processor and crush until well-crumbled.
  2. Add in the cream cheese and pulse until well combined.
  3. Use a 1 ½ Tablespoon cookie scoop to scoop out dough and roll it into balls.
  4. Place each truffle on a large cookie sheet lined with parchment paper.
  5. Place the truffles in the refrigerator for 15-30 minutes or up to an hour to set.
  6. When ready to decorate the truffles, heat the candy, melt it in a medium mixing bowl in the microwave for 45 seconds, and stir well.
  7. Continue heating and then stirring in 10-20 second increments until smooth.
  8. Working in batches, dip the set truffles in the melted candy until fully coated and then place them on a clean sheet of parchment paper on a hard surface.
  9. Press a large eye onto the front of each truffle and sprinkle the top with color-matching sprinkles as "hair."
  10. Repeat with each truffle, and then allow them all to set in the refrigerator for at least 30 minutes or until the candy has hardened.
