- In a medium bowl, combine the diced mangoes, diced red bell pepper, minced garlic, diced cucumber, diced jalapeno, diced red onion, granulated sugar (if using), kosher salt, fresh lime juice, and chopped cilantro. Stir everything together until well combined.
- Taste the salsa and adjust seasonings as needed. You may want to add more salt, lime juice, or sugar to suit your preference.
- Serve immediately, or cover and refrigerate for at least 30 minutes to allow the flavors to meld before serving.
Notes
This mango salsa is best served fresh. It pairs wonderfully with tortilla chips, grilled fish, chicken, or as a topping for tacos and salads.
