Ingredients
  

Crust Ingredients
  • 2 cups all-purpose flour
  • 0.5 cup sugar
  • 0.25 tsp salt
  • 1 cup unsalted butter melted
Lemon Filling Ingredients
  • 6 large eggs
  • 3 cups sugar
  • 0.5 cup lemon juice
  • 6 tbsp all-purpose flour
  • 1 tsp baking powder
Garnish
  • powdered sugar for dusting, if desired

Method
 

Preparation Steps
  1. Preheat the oven to 325°F (160°C).
  2. For the crust: In a medium bowl, whisk together the flour, sugar, and salt. Pour in the melted butter and stir until combined. Press the mixture evenly into the bottom of a greased 9x13 inch baking dish.
  3. Bake the crust for 20 minutes, or until lightly golden.
  4. For the filling: While the crust is baking, whisk together the eggs, sugar, lemon juice, flour, and baking powder in a separate bowl until smooth.
  5. Pour the lemon filling mixture over the hot baked crust. Return the dish to the oven and bake for another 35 minutes, or until the filling is set.
  6. Let the lemon bars cool completely in the pan before cutting them into squares.
  7. Dust with powdered sugar, if desired, before serving.

Notes

These lemon bars are best enjoyed chilled. They can be stored in an airtight container in the refrigerator for up to 3 days.
