  • 1 pound hot Italian sausage
  • 1 pound ground beef
  • 2 small onions, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons Italian seasoning
  • 0.5 teaspoon crushed red pepper flakes
  • 6 ounces tomato paste
  • 29 ounces diced tomatoes with garlic
  • 8 cups chicken broth
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper, freshly ground
  • 8 ounces mafalda pasta
  • 8 ounces ricotta cheese
  • 2 ounces Parmesan cheese
  • 2 ounces freshly shredded Mozzarella

Preparation Steps
  1. In a large soup pot or Dutch oven, cook and crumble the sausage and ground beef over medium-high heat. Add the onions and garlic, cook until softened. Sprinkle with Italian seasoning and red pepper flakes.
  2. Add tomato paste, diced tomatoes with garlic, chicken broth, salt, and pepper. Stir and bring to a simmer. Add pasta and cook until tender, about 8-10 minutes.
  3. While pasta is cooking, mix ricotta, Parmesan, and mozzarella in a bowl.
  4. Serve the soup hot, topping each bowl with a generous scoop of the cheese mixture.
