Ingredients
  

For the Sauce
  • 0.33 cup honey
  • 4 cloves garlic minced
  • 0.5 cup low sodium soy sauce
  • 0.5 cup ketchup (no-salt preferred)
  • 0.5 teaspoon dried oregano (or other dried herbs)
  • 2 tablespoons fresh parsley chopped
For the Chicken
  • 1 tablespoon sesame seed oil (or vegetable/olive oil)
  • 4 bone-in skinless chicken thighs
  • salt to taste
  • freshly ground black pepper to taste
For Garnish
  • 0.5 tablespoon toasted sesame seeds
  • sliced green onions

Method
 

Preparation Steps
  1. Make the sauce: In a small mixing bowl, combine honey, minced garlic, soy sauce, ketchup, oregano, and parsley. Mix until well combined and set aside.
  2. Prep and cook the chicken: Heat the Instant Pot in sauté mode. Add sesame oil to the pot. Season the chicken thighs with salt and pepper and cook them for about 2 to 3 minutes per side, until browned.
  3. Add the sauce: Pour the prepared honey garlic sauce into the pot with the chicken. Cover and lock the lid.
  4. Cook: Set the Instant Pot to poultry mode (or pressure cook mode) and cook for 20 minutes. Turn off the pot and allow it to naturally release pressure for about 5 minutes.
  5. Serve: Transfer the chicken to a serving plate. Spoon the remaining sauce from the pot over the chicken. Garnish with toasted sesame seeds and sliced green onions, then serve.

Notes

This recipe is perfect for a quick weeknight meal. For a thicker sauce, you can use the sauté function to reduce it after cooking the chicken, or thicken it with a cornstarch slurry.
