  • 6 cups old-fashioned oats
  • 2 cups shredded unsweetened coconut
  • 0.75 cup whole wheat flour
  • 1 pinch salt
  • 2 tablespoons cinnamon
  • 0.5 cup water
  • 0.5 cup coconut oil melted
  • 1 cup honey
  • 2.5 tablespoons vanilla extract
  • 1 cup nuts optional (pecans recommended)

  1. Preheat oven to 225 degrees Fahrenheit. Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the oats, shredded coconut, whole wheat flour, salt, and cinnamon. In a separate small bowl, whisk together the water, melted coconut oil, honey, and vanilla extract. If your honey is thick, warm it slightly in the microwave or with hot water. Pour the wet ingredients over the dry ingredients and mix thoroughly until no dry spots remain.
  3. Spread the granola mixture evenly onto the prepared baking sheet. Bake for approximately 1 hour and 30 minutes, stirring every 20 minutes to ensure even baking. Avoid over-stirring to encourage larger clumps.
  4. After about an hour of baking, when the granola begins to turn a light golden color, add the nuts if using. Continue baking until the granola is a nice golden brown, being careful not to burn the nuts.
  5. The granola will still feel slightly sticky when removed from the oven. It will crisp up as it cools.
  6. Once completely cooled, store the granola in an airtight container.

Notes

This homemade granola stays fresh for several weeks when stored properly in an airtight container. Enjoy it with yogurt, milk, or as a topping for fruit salads.
