Ingredients
  

Marinade
  • 0.037 L olive oil
  • 2 whole lemons juiced
  • 1 tablespoon fresh thyme minced
  • sea salt to taste
  • freshly ground peppercorns to taste
Skewers
  • 0.454 kg shrimp thawed, peeled, and deveined
  • 1 cup cherry tomatoes
  • 1 cup button mushrooms
  • 1 medium zucchini diced into 0.5-inch cubes

Method
 

Preparation
  1. In a large resealable plastic bag, combine thawed shrimp, olive oil, lemon juice, thyme, salt, and pepper.
  2. Toss the bag lightly to coat the shrimp, then place it in the refrigerator for 15 minutes to marinate.
  3. Prepare your grill for medium-high heat.
  4. Remove the shrimp from the marinade, reserving the marinade for brushing later. Discard any leftover marinade.
  5. Thread the shrimp, cherry tomatoes, mushrooms, and zucchini alternately onto skewers. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning.
Grilling
  1. Grill the skewers for 2-3 minutes per side, or until the shrimp are pink and cooked through. Brush with the reserved marinade during the last minute of grilling.

Notes

Serve these grilled shrimp skewers hot off the grill. They are delicious on their own or with a side of rice or a salad.
