Preparation Steps
- Marinate chicken: Place chicken, lime juice, honey, olive oil, salt, and pepper in a large ziptop bag. Seal and refrigerate for at least 30 minutes or overnight.
- Preheat grill to medium-high heat. Grill chicken for 7-8 minutes per side until cooked through. Simultaneously, grill corn for about 7 minutes, turning every minute.
- Remove chicken and corn from grill. Cut corn off the cob into a large bowl. Melt butter and toss with corn to coat.
- Dice cooked chicken into bite-sized pieces. Add to the bowl with corn.
- Add diced avocado, bell pepper, tomatoes, and cilantro to the bowl. Mix well. Drizzle with additional lime juice if desired.
- Serve immediately or chill before serving.
Notes
Best enjoyed fresh, but can be stored covered in the refrigerator for up to one day.
