  • 2 cups all-purpose flour
  • 4 tsp baking powder
  • 4 tbsp sugar
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1.5 tsp ground ginger
  • 0.25 tsp ground nutmeg
  • 0.5 tsp salt
  • 2 large eggs
  • 1 cup milk
  • 0.5 cup vegetable oil
  • 0.5 cup molasses
  • 0.5 tsp vanilla extract

Preparation Steps
  1. Add the all-purpose flour, baking powder, sugar, brown sugar, cinnamon, ground ginger, ground nutmeg, and salt to a mixing bowl and stir together.
  2. In another mixing bowl, whisk the eggs together. Add the milk, vegetable oil, molasses, and vanilla extract. Whisk to combine.
  3. Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix.
  4. Grease the waffle iron with cooking spray. Add about 0.25 cup to the waffle iron. Cook until slightly browned on both sides of the waffle, about 1 to 2 minutes. Time may vary depending on the waffle iron you use.
  5. Serve with maple syrup, butter or whipped cream.
