  • 2.5 cups cake flour
  • 1 Tbsp baking powder
  • 0.5 tsp kosher salt
  • 0.75 cup unsalted butter softened
  • 1.75 cups granulated sugar
  • 5 large egg whites room temperature
  • 2 tsp vanilla extract
  • 0.75 cup buttermilk
  • 0.5 cup sprinkles

Preparation Steps
  1. Preheat oven to 350°F. Line a cupcake tin with paper liners.
  2. Combine cake flour, baking powder, and salt in a bowl. Set aside.
  3. In a mixing bowl, beat butter and sugar on medium speed for 2 minutes until fluffy. Scrape down sides.
  4. Add egg whites one at a time, beating well after each addition. Mix in vanilla extract.
  5. Alternately add dry ingredients and buttermilk to the batter, starting and ending with dry ingredients. Mix after each addition.
  6. Fold in sprinkles.
  7. Fill cupcake liners two-thirds full. Bake for 21-23 minutes. Cool in pans for 5 minutes, then transfer to racks.
  8. Frost with your favorite frosting once cupcakes are completely cooled.
