Ingredients
  

Main Ingredients
  • 8 pieces chicken drumsticks on the bone, skin removed
  • 0.33 cup low sodium soy sauce use gluten-free soy sauce or coconut aminos for paleo
  • 0.33 cup apple cider vinegar
  • 1 small head of garlic crushed
  • 6 ground peppercorns
  • 4 leaves bay leaves
  • 1 piece jalapeño chopped (optional)

Method
 

Preparation Steps
  1. Marinate chicken in vinegar, soy sauce, garlic, jalapeño, and pepper for at least an hour.
  2. Put chicken, water, bay leaves, and marinade into a skillet and cook on medium-low heat until tender, about 45 minutes.
  3. Remove lid and cook for an additional 15 minutes to reduce the sauce.
  4. Discard bay leaves and serve hot over rice.

Notes

Serve with steamed rice for a complete meal.
