Ingredients
  

Sauce
  • 2 tablespoons soy sauce
  • 2 teaspoons chili garlic sauce
  • 2 teaspoons honey (optional)
  • 2 teaspoons rice vinegar
Main Ingredients
  • 1 tablespoon olive oil
  • 1 lb ground turkey
  • 1 cup shredded carrots
  • 3 cups shredded cabbage
  • 0.25 medium red onion shredded or thinly sliced
  • 2 large eggs
  • 1 cup sliced pea pods
  • 1 tablespoon sesame seeds for garnish (optional)

Method
 

Preparation Steps
  1. In a small bowl, whisk together soy sauce, chili garlic sauce, honey (if using), and rice vinegar. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add ground turkey to the skillet and cook until no longer pink, breaking it up with a spatula.
  4. Add shredded carrots, cabbage, and red onion to the skillet. Pour the prepared sauce over the ingredients and mix well. Cook for 3-5 minutes, stirring occasionally.
  5. Push the meat and vegetables to one side of the skillet. Crack the eggs into the empty side and scramble them with a spatula until fully cooked.
  6. Fold the scrambled eggs into the meat and vegetable mixture.
  7. Add the sliced pea pods to the skillet and cook for 1 minute more, just until tender-crisp.
  8. Remove from heat and serve immediately, garnished with sesame seeds if desired.

Notes

This dish is great on its own or served over rice or cauliflower rice for a complete meal.
