  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon dried basil
  • salt
  • black pepper
  • 0.25 cups Parmesan cheese
  • 2 cups baby spinach
  • 2 cloves garlic
  • 1 tablespoon butter

Preparation Steps
  1. Season the pork chops with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook the chops for 5-6 minutes on each side until golden and cooked through. Remove and set aside.
  2. In the same skillet, add butter and minced garlic; sauté for 30 seconds until fragrant.
  3. Add chicken broth, thyme, rosemary, and basil. Bring to a simmer and cook for 4 minutes to reduce slightly.
  4. Stir in heavy cream and Dijon mustard. Season with additional salt and pepper if needed. Simmer for 2-3 minutes until the sauce thickens.
  5. Add Parmesan cheese and baby spinach, cook for 1 minute until the spinach wilts.
  6. Return pork chops to the skillet, spoon sauce over, and cook for an additional 1-2 minutes to heat through. Serve hot.
