  • 6 eggs hardboiled eggs
  • 8 ounces small pasta (ditalini, penne, or elbow macaroni)
  • 0.75 cup mayonnaise
  • 1.5 tablespoons dijon mustard
  • 1 teaspoon white vinegar or fresh lemon juice
  • 1 clove garlic, finely minced or crushed to paste
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon smoked paprika
  • 0.25 teaspoon cayenne pepper
  • 2 tablespoons red onion, finely chopped
  • 2 tablespoons green onions
  • 0.25 cup cooked and crumbled bacon (optional)

Preparation Steps
  1. Cook the pasta according to the package directions, adding a generous tablespoon of salt to the water. Drain and rinse with cool water. Peel the eggs and separate the yolks from the whites.
  2. Chop the egg whites and set aside. Crush the yolks into a fine powder or press through a fine metal strainer into a large bowl. Mix in mayonnaise, mustard, vinegar, garlic, salt, paprika, and cayenne pepper.
  3. Add the drained pasta to the dressing and mix well. Stir in red onion, green onions, and egg whites. Garnish with additional green onions and paprika if desired. Serve immediately or refrigerate until ready.

Notes

This pasta salad is best served chilled. Feel free to add bacon for extra flavor.
