  • 2 pounds corned beef brisket
  • 3 medium carrots peeled and cut into 1-inch chunks
  • 1 cup frozen pearl onions
  • 0.25 cup chopped fresh parsley
  • 0.125 teaspoon whole peppercorns
  • 3 cups water
  • 1 head cabbage cut into 6 wedges

Preparation Steps
  1. Place the corned beef brisket, carrots, pearl onions, parsley, bay leaves, and peppercorns in the Instant Pot. Add 3 cups of water.
  2. Close the lid and cook on high pressure for 1 hour and 45 minutes. Allow natural pressure release.
  3. Add the cabbage wedges on top of the cooked beef, close the lid, and cook on high pressure for 3 minutes. Quick release pressure afterward.
  4. Remove the meat, slice into 6 pieces, and serve with vegetables and broth.
