Preparation Steps
- Cook the bacon in a large skillet until crispy. Remove and drain on paper towels, then break into pieces.
- Add green onions to the bacon fat and cook for 1 minute. Remove and set aside.
- Add butter to the skillet. Season chicken with salt and pepper, then brown on both sides, about 3 minutes per side. Remove from pan and set aside.
- Arrange carrots, onions, mushrooms, potatoes, and garlic at the bottom of the slow cooker. Season with remaining salt and pepper, stir, then layer chicken and bacon on top.
- Pour chicken broth and wine over the ingredients. Add thyme and bay leaves. Cover and cook on LOW for 4 to 5 hours until chicken is cooked through.
- Optional: Remove 3 tablespoons of liquid, whisk with cornstarch to make a slurry, then return to slow cooker to thicken sauce. Cook for an additional 20 to 30 minutes.
- Transfer chicken to a cutting board, shred or chop, then stir back into the sauce. Serve hot with side dishes.
