- Preheat vegetable oil in a large skillet over medium heat.
- In a shallow bowl, whisk eggs and milk together.
- In another bowl, combine flour, salt, and pepper.
- Dip shrimp into the flour mixture, then into the egg mixture, and finally coat with shredded coconut and Panko breadcrumbs.
- Fry the coated shrimp in hot oil until golden brown, about 2-3 minutes per side.
- Remove shrimp from oil and place on paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.
Notes
For extra crispiness, double coat the shrimp and fry in hotter oil for a crisper texture.
