  • 0.75 cup cold buttermilk
  • 0.25 cup sugar
  • 2 tsp vanilla extract
  • 1 large egg
  • 1 cup all purpose flour e.g., Bob's Red Mill
  • 1 cup white whole wheat flour e.g., Bob's Red Mill
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 3 tbsp chilled butter must be cold, cut into small pieces
  • 0.75 cup chocolate chips
  • 1 large egg white lightly beaten
  • 1.5 tbsp sugar

Method
 

Preparation Steps
  1. Preheat oven to 375°F.
  2. Combine the first four ingredients in a medium bowl, stirring with a whisk.
  3. Spray baking sheet with cooking spray.
  4. Combine flour, baking powder, salt in a large bowl, stirring with a whisk. Cut in chilled butter until the mixture resembles coarse meal.
  5. Gently fold in chocolate chips. Add milk mixture, stirring just until moist.
  6. Place dough onto a floured surface and knead lightly four times with floured hands.
  7. Form dough into a 9-inch circle onto baking sheet, about 3/4 inch thick.
  8. Using a knife, cut dough into 12 wedges all the way through.
  9. Brush egg white over dough and sprinkle evenly with sugar.
  10. Bake until golden, about 18-20 minutes. Serve warm.
