  • 1 cup granulated sugar
  • 0.5 cup unsalted butter, softened
  • 2 medium overripe bananas, mashed
  • 2 large eggs
  • 7 tablespoons sour milk or buttermilk To make sour milk: add 1 teaspoon vinegar to milk and let sit 5 minutes
  • 0.25 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 2 cups chocolate chips, divided

Method
 

Preparation Steps
  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. In a separate bowl or blender, combine the mashed bananas, eggs, sour milk/buttermilk, salt, and baking soda. Mix until well combined.
  4. Add half of the banana mixture to the butter mixture along with 1 cup of flour. Mix until just combined. Repeat with the remaining banana mixture and flour. Do not overmix.
  5. Gently stir in 1.5 cups of the chocolate chips.
  6. Pour the batter into the prepared loaf pan and sprinkle the remaining chocolate chips over the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out mostly clean.
  8. Let the bread cool in the pan for at least 10 minutes before transferring to a wire rack to cool completely.

Notes

This banana bread is best served warm or at room temperature. It also freezes well, so you can make a batch ahead of time.
