  • 1.5 cups chocolate cookie crumbs
  • 6 tablespoons unsalted butter melted
  • 3 packages cream cheese 8 oz packages, softened
  • 1 cup brown sugar
  • 3 large eggs
  • 2 cups pumpkin puree
  • 0.25 cup sour cream
  • 1.5 teaspoons pumpkin spice
  • 1 teaspoon vanilla extract
  • 0.125 teaspoon salt
  • 1 cup heavy cream
  • 1.5 cups dark chocolate finely chopped
  • 1 tablespoon unsalted butter

Method
 

Preparation Steps
  1. Preheat oven to 350°F. Mix chocolate cookie crumbs and melted butter. Press into a 9-inch springform pan. Bake for 12 minutes. Cool completely.
  2. Beat cream cheese for 1 minute. Add brown sugar and beat. Add eggs one at a time, then pumpkin puree, sour cream, pumpkin spice, vanilla, and salt; mix well.
  3. Pour mixture into crust. Bake at 375°F for 20 minutes, then reduce temperature to 300°F and bake for 30 minutes until set.
  4. Cool the cheesecake; refrigerate for 5-6 hours.
  5. Prepare ganache by heating cream until steaming, then add chopped chocolate and butter. Let sit for 3 minutes, stir until smooth, cool for 15 minutes, then pour over cooled cheesecake.
