  • 1.5 teaspoons baking soda
  • 1 teaspoon kosher salt
  • 2.5 cups finely shredded zucchini
  • 0.25 cup unsalted butter (melted)
  • 0.3 cup powdered sugar
  • 6 tablespoons heavy whipping cream
  • 0.5 teaspoon vanilla extract

Method
 

Preparation Steps
  1. Preheat oven to 350°F. Line a 9x13 inch baking dish with parchment paper. Set aside.
  2. In a large mixing bowl, combine oil, granulated sugar, and brown sugar. Mix well. Add vanilla extract and mix again.
  3. Stir in flour, cocoa powder, baking soda, and salt until just combined. Fold in shredded zucchini until evenly incorporated.
  4. Pour batter into prepared baking dish. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
  5. While brownies cool, prepare frosting by whisking melted butter with cocoa powder. Add powdered sugar, heavy cream, and vanilla. Whisk until smooth.
  6. Spread frosting over cooled brownies. Slice into squares and serve.

Notes

For an extra fudge-like texture, chill the brownies before serving.
