Preparation Steps
- In a blender or food processor, combine the olive oil, honey, minced garlic, chipotle peppers, cumin, salt, and black pepper. Blend until smooth.
- Place the chicken pieces in a large resealable bag or a non-reactive container. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the container.
- Refrigerate for at least 30 minutes, or up to 6 hours, turning the chicken occasionally. For best flavor, marinate for 2-4 hours.
- When ready to cook, remove the chicken from the marinade (discarding any excess marinade). Cook using your preferred method (grilling, baking, pan-searing).
Notes
This versatile marinade can also be used for pork or shrimp. Adjust the number of chipotle peppers to control the heat level.
