  • 6 tablespoons olive oil
  • 2 tablespoons honey
  • 4 cloves garlic
  • 4.5 peppers chipotle peppers in adobo sauce frozen peppers directly into the blender
  • 0.5 teaspoon cumin
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon black pepper freshly ground
  • 2 pounds chicken (breasts, thighs, drumsticks) bone-in or boneless

Method
 

Preparation Steps
  1. In a blender, combine olive oil, honey, garlic, chipotle peppers, cumin, salt, and black pepper. Blend until smooth. Pour the marinade over the chicken in an airtight container or ziplock bag, shake well to coat.
  2. Refrigerate and marinate for at least 6 hours, turning the chicken occasionally.
  3. Preheat grill or oven. If grilling, cook chicken about 6-8 minutes per side until internal temperature reaches 165°F. If baking, roast at 450°F for 35-40 minutes until golden and cooked through.

Notes

This marinade offers a smoky southwestern flavor and can be adjusted for heat level by varying the chipotle peppers.
