  • 2 tablespoons olive oil
  • 1 pound skinless boneless chicken breasts cut into 1-inch cubes or strips
  • 1 cup frozen peas
  • 1 cup grape tomatoes quartered
  • 1 zucchini zucchini sliced into thin half-moons
  • 4 cloves garlic minced
  • 0.25 cup white wine
  • 0.33 cup heavy cream
  • 0.25 cup parmesan cheese grated

Preparation Steps
  1. Cook the penne pasta according to the package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Season chicken with salt and pepper, then add to the skillet. Cook until browned, about 5-7 minutes.
  4. Add zucchini, tomatoes, frozen peas, and minced garlic to the skillet. Cook for another 3-4 minutes.
  5. Pour in white wine, scraping up browned bits from the pan. Stir in heavy cream and cook for 1-2 minutes.
  6. Add cooked pasta to the skillet and toss to combine. Stir in grated parmesan cheese.
  7. Taste and adjust seasoning if necessary. Serve hot garnished with fresh basil if desired.
