- Heat olive oil in a large skillet.
- In a large dish or bowl, whisk together flour, paprika, salt, and pepper.
- Place chicken pieces in the flour mixture and toss to coat; add to hot oil.
- Cook chicken until browned, about 4-5 minutes per side. Remove and set aside.
- Add sliced onions and carrots to the skillet and sauté for 5 minutes.
- Stir in parsley, thyme, and garlic; cook for 1 minute.
- Mix in chopped tomatoes, then add wine and chicken broth, bringing to a boil.
- Return chicken to skillet, cover, and simmer for 1 hour.
- Serve the chicken over cooked egg noodles, garnished with parsley and with a dollop of sour cream.
