Preparation Steps
- In a small bowl, combine Greek yogurt, sriracha sauce, and water. Whisk until smooth.
- Place baby arugula in a shallow serving bowl. Layer with cooked brown rice, cooked chicken breast, cubed avocado, halved grape tomatoes, and shaved Gruyere cheese.
- Season with a pinch of kosher salt and freshly ground black pepper. Drizzle the prepared sriracha yogurt dressing over the bowl.
Notes
This recipe is easily customizable. Feel free to substitute spinach for arugula, or use a different cheese like Swiss or cheddar. Rotisserie chicken can be used for added convenience.
