  • 2 large carrots peeled and grated (about 1.5 cups)
  • 0.75 cup granulated sugar
  • 0.5 cup butter melted
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
Streusel Topping
  • 4 tablespoons butter melted
  • 0.5 cup all-purpose flour
  • 0.5 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 0.125 teaspoon salt
Honey Butter Glaze
  • 0.25 cup butter melted
  • 2 tablespoons honey

Method
 

Preparation Steps
  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round baking pan.
  2. In a large bowl, whisk together the granulated sugar, melted butter, and eggs until well combined. Stir in the grated carrots.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The batter will be very thick.
  4. To make the streusel topping, combine the melted butter, flour, brown sugar, cinnamon, and salt in a small bowl. Mix with a fork or your fingers until crumbly, resembling pebbles.
  5. Spread the cake batter evenly into the prepared baking pan. Sprinkle the streusel topping over the batter.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. The streusel should be golden brown.
  7. While the cake is baking, prepare the honey butter glaze by melting the butter and whisking in the honey until smooth.
  8. Once the cake is out of the oven, immediately drizzle the honey butter glaze over the warm streusel topping. Let cool slightly before serving.
